Fiesta Burrito Bowl with Quinoa & Brown Rice

Ingredients

  • 2 pkgs (each 240 g) UNCLE BEN’S® BISTRO EXPRESS® Quinoa & Brown Rice & Garlic Flavour
    4 Chicken breasts
    2 cups (500 mL) baby spinach
    1 cup (250 mL) black beans, drained and rinsed
    1 cup (250 mL) corn
    1 cup (250 mL) chopped cucumber
    1/2 cup (125 mL) prepared salsa
    1/2 cup (125 mL) guacamole
    1/2 cup (125 mL) Non-fat Greek yogurt
     3-4 Lime wedges

Directions

  • Preheat oven to 425°F (220°C) and line a baking sheet with parchment. Bake chicken until just cooked through.
  • Meanwhile, cook quinoa & rice mixture according to microwave directions; divide evenly among 4 bowls. Slice chicken and serve over top.
  • Garnish each bowl with baby spinach, black beans, corn, cucumber, salsa, guacamole and yogurt. Serve with lime wedges.
