Thai Pineapple Jasmine Rice Salad

  • 1 pouch (240 g) UNCLE BEN’s® BISTRO EXPRESS® Jasmine Rice
    ½ cup (125 mL) Sliced mushrooms
    ½ cup (125 mL) Diced fresh pineapple
    ½ cup (125 mL) Fresh cilantro leaves
    ½ cup (125 mL) Shredded carrots
    ¼ cup (50 mL) Sliced green onion
    ¼ cup (50 mL) Diced red pepper
    ¼ cup (50 mL) Sliced red cabbage
    ¼ cup (50 mL) Diced red onion
    ¼ cup (50 mL) Thai or Asian Dressing


  • In a bowl add UNCLE BEN’S® BISTRO EXPRESS® Jasmine Rice, mushrooms, pineapple, cilantro, green onion, pepper, cabbage and red onion.  Toss until well combined.
  • Add dressing and toss until well combined.


Alternative options:

Vegetables in recipe may be cooked for preference.

Add shredded carrots or cucumber.

Garnish with slices of lime to squeeze over top.

Add shredded cooked chicken.

Add cooked shrimp.

Serve over mixed greens.

Replace pineapple with mango, peaches or nectarines.

Easy Thai Dressing:  In a 1 cup (250 mL) jar add 2 Tbsp. (30 mL) coconut oil, 1 Tbsp. (15 mL) lime juice, 1 Tbsp. (15 mL) brown sugar, 1 tsp. (5 mL) minced ginger, ½ tsp (2.5 mL) minced garlic, ½ tsp (2.5 mL) soy sauce,¼ tsp (1.25 mL) Sriracha and ⅛ tsp. (0.5 mL) salt.  Put a lid on the jar and shake well.  Makes ¼ cup (50 mL).
