Sweet Onion and Sausage Toss with Basmati Medley

Ingredients

  • 1 pkg – (170 g)
    UNCLE BEN’S® Basmati Medley
    1 lb (500 g) Sweet Italian sausage, removed from casing
    1/4 tsp (1 mL) Each salt and pepper
    1 tbsp (15 mL) Olive oil
    1 Sweet onion, diced
    1 Red pepper, diced
    2 1/4 cups (550 mL) Sodium-reduced chicken broth
    1/2 cup (125 mL) Peas

Directions

  • Season sausage meat with salt and pepper. In large skillet, heat oil over medium-high heat; cook sausage meat, breaking up with a spoon, for 4 to 6 minutes or until no longer pink and starting to brown. Add onion and red pepper; cook for 3 to 5 minutes or until softened.
  • Stir in rice and seasoning packet, and broth; bring to boil. Reduce heat to medium-low; cover and simmer for about 20 minutes or until broth is absorbed.
  • Remove from heat; stir in peas. Let stand for 5 minutes. Fluff with fork and serve.
