Ingredients

  • 2 pkgs (each 250 g) UNCLE BEN’S® BISTRO EXPRESS® Jasmine
    4 Chicken Breasts
    2 tbsp (30 mL) peanut butter
    2 tbsp (30 mL) apple cider vinegar
    2 tbsp (30 mL) Thai sweet chili sauce
    2 tbsp (30 mL) soy sauce
    1/4 cup (60 mL) chopped peanuts
    chopped cilantro
    Lime wedges

Directions

  • Preheat broiler to high. Coat baking sheet with cooking spray. Cut chicken into 3 slices and thread onto skewers. Stir peanut butter with vinegar, chili sauce and soy sauce until combined. Brush skewers with sauce. Broil for 2 to 3 minutes per side or until cooked through, basting skewers with satay sauce halfway through cooking.
  • Meanwhile, prepare rice according to microwave directions.
  • Serve satays with rice. Garnish with peanuts, cilantro and serve with lime wedges and more Thai sweet chili sauce.

Tips

Serve with extra Thai sweet chili sauce for a dip that won’t disappoint!
