Ingredients

  • 1 pkg (170 g) UNCLE BEN’S® Rice & Grains 5 Grain Blend-Savoury Quinoa Pilaf
    4 cups (1 L) Baby spinach
    1 Ripe avocado, peeled, pitted and sliced
    1/4 cup (60 mL) Dried cranberries
    2 Clementines, peeled and separated into segments
    3 tbsp (45 mL) Olive oil
    3 tbsp (45 mL) Lemon juice
    2 tbsp (30 mL) Chopped fresh parsley
    1/2 tsp (2 mL) Dijon mustard
    1/4 tsp (1 mL) Each salt and freshly ground pepper
    1/4 cup (60 mL) Chopped toasted almonds
    1/4 cup (60 mL) Crumbled goat cheese (optional)

Directions

  • Prepare quinoa pilaf according to package directions. Spread into thin layer on baking sheet and refrigerate for about 15 minutes or until cooled completely.
  • Toss quinoa pilaf with baby spinach, avocado, cranberries and clementines.
  • Whisk together olive oil, lemon juice, parsley, mustard, salt and pepper. Drizzle over salad and toss to coat.
  • Garnish with toasted almonds, and goat cheese (if using).

Tips

Add cooked, sliced chicken breast for added protein if desired.
