Spicy Thai Style Lettuce Wraps with Jasmine Rice

Ingredients

  • 1 pkg (240 g) UNCLE BEN’S® BISTRO EXPRESS® Jasmine
    1 tbsp (15 mL) Rice vinegar
    1 tsp (5 mL) Sriracha
    1/4 tsp (1 mL) Each salt and sugar
    12 Large Boston bibb lettuce leaves
    1 pkg (400 g) Sweet Thai Chili Fully Cooked Chicken Breast Strips
    1/2 Red pepper, thinly sliced
    1 cup (250 mL) Prepared shredded carrots
    1 cup (250 mL) Diced cucumber
    1/3 cup (75 mL) Cilantro leaves
    Lime wedges and hoisin sauce, for serving

Directions

  • Prepare rice according to microwave directions.  Meanwhile, stir rice vinegar with sriracha, salt and sugar. Pour over cooked rice and stir to coat evenly.
  • Fill lettuce cups with rice mixture and chicken. Top with red pepper, carrot, cucumber and cilantro leaves. Serve with lime and soy sauce.

Tips

For added crunch, top with peanuts, cashews or almonds.
