Southwest Beefy Rice & Quinoa Skillet

  • 1 pkg (240 g) UNCLE BEN’S® Rice & Grains RTH Spicy Wholegrain & Quinoa, with chili
    2 tbsp (30 mL) vegetable oil
    1 small onion, diced small
    1 pound (450 g) Ground beef
    1 cup (250 mL) Frozen corn
    1 cup (250 mL) Diced tomato (1 medium or 2 roma tomatoes)
    1 can (14.5 ounce) Black beans, drained and rinsed
    3 tbsp (45 mL) Taco seasoning
    1 cup (250 mL) Shredded cheddar cheese


  • Prepare rice according to package directions.
  • In a separate, large sauté pan, heat oil. Add in onion and sauté until golden brown.
  • Add in ground beef and sauté until browned and cooked.
  • Add in corn, tomato, black beans and taco seasoning. Cook until tender and heated through.
  • When rice is finished cooking combine with beef and vegetable mixture.
  • Mix well, top with cheddar cheese, and serve.
