Rustic Spinach & Parmesan Pilaf with Converted Rice

Ingredients

  • 2 pkgs (250 g each) UNCLE BEN’S® BISTRO EXPRESS® Converted Rice
    1 tbsp (15 mL) olive oil
    1 package (400 g) Italian Style Fully Cooked Chicken Breast Strips
    3 tbsp (45 mL) Tomato paste
    1 tsp (5 mL) Italian seasoning
    1/3 cup (75 mL) Chicken stock
    4 cup (1 L) Baby spinach
    1/4 cup (60 mL) Grated Parmesan cheese

Directions

  • Heat oil in large skillet set over medium-high heat. Stir in rice, chicken, tomato paste, Italian seasoning and chicken broth. Cook, stirring occasionally, for 5 minutes or until rice and chicken are heated through.
  • Stir in spinach. Cook for 1 minute or until starts to wilt. Stir in Parmesan cheese and olives if using.

Tips

For a Mediterranean twist, serve with black or green olives.
