Rockin’ Rice & Veggie Pizza

  • 1 can (398 mL) No salt added diced tomatoes
    1 cup (250 mL) UNCLE BEN’S® CONVERTED® Brand Rice
    2 cloves Garlic, minced
    1 tsp (5 mL) Dried oregano
    Pinch Each salt and pepper (approx.)
    1 can (398 mL) No salt added chickpeas, drained and rinsed
    1/4 cup (60 mL) Chopped fresh basil
    2 cups (500 mL) Thinly sliced zucchini
    2 cups (500 mL) Sliced bell peppers
    1 cup (250 mL) Shredded part-skim mozzarella
    1 tbsp (15 mL) Extra-virgin olive oil


  • In large ovenproof skillet (10-inch), bring tomatoes and ¾ cup (175 mL) water to simmer over medium-high heat. Stir in rice, garlic, oregano, salt and pepper; reduce heat to low. Cover and cook for about 20 minutes or until rice is tender. Stir in chickpeas and half of the basil.
  • Layer half each of the zucchini, peppers and mozzarella over top; repeat layers. Drizzle with olive oil.
  • Broil for 5 to 8 minutes or until cheese is melted and vegetables are tender-crisp; season with salt and pepper to taste. Garnish with remaining basil.


Serve with a colorful side salad.
