Roasted Garlic Chicken Pilaf

  • 1 pkg (170 g) UNCLE BEN’S® Rice & Grains Brown Rice Medley
    2 tbsp (30 mL) vegetable oil
    1 small onion, diced small
    12 ounces (340g) Chicken breast, diced (about 2)
    1 tsp (5 mL) Each, salt and pepper
    1 cup (250 mL) Frozen corn
    1 cup (250 mL) Frozen peas
    1 cup (250 mL) Chopped carrots
    1 Lemon, juiced
    ¼ cup (60 mL) Chopped parsley


  • Prepare rice according to package instructions.
  • In a separate large sauté pan, heat oil. Add onion and sauté until golden brown.
  • Season chicken with salt and pepper, add to pan and sauté until browned and almost cooked through.
  • Add in corn, peas and carrots and combine with chicken and onion. Cook until tender and heated through.
  • When rice is finished cooking, combine with chicken and vegetables.
  • Add in lemon juice and parsley.
  • Mix well and serve.
