Quick Chicken Teriyaki

Quick Chicken Teriyaki

Ingredients

  • 2 pkgs (each 240 g) UNCLE BEN’S® BISTRO EXPRESS® Jasmine
    2 tbsp (30 mL) canola oil
    4 Chicken Breasts
    1 bag (340 g) broccoli florets
    1/3 cup (75 mL) prepared teriyaki sauce
    2 tbsp (30 mL) water
    1 tbsp (15 mL) honey
    1 tbsp (15 mL) rice wine vinegar
    1 tbsp (15 mL) prepared minced garlic
    1 tsp (5 mL) cornstarch

Directions

  • Heat oil in large skillet set over high heat. Sauté chicken for 2 to 3 minutes or until starts to brown. Add broccoli florets; cook for 2 minutes. Meanwhile, whisk teriyaki sauce with water, honey, rice wine vinegar, garlic and cornstarch until smooth.
  • Add sauce to pan. Bring to a boil. Cook, stirring for 1 to 2 minutes or until chicken is cooked and broccoli is tender crisp.
  • Meanwhile, prepare rice according to microwave directions.
  • Serve chicken stir fry and broccoli with rice.

Tips

For a little extra tang, mix in 1tsp (5mL) of fresh, minced ginger.
