Overstuffed Goat Cheese Chicken Breast with Long Grain & Wild Rice

Ingredients

  • 2 pkgs (each 250 g) UNCLE BEN’S® BISTRO EXPRESS® Long Grain & Wild-Roasted Chicken Flavour
    4 Chicken Breasts
    1/4 cup (60 mL) herbed goat cheese
    1/2 tsp (2 mL) salt, divided
    1 bunch (1 lb) asparagus, trimmed
    1/2 cup (125 mL) grape tomatoes

Directions

  • Preheat oven to 450°F. (230°C). Line baking sheet with parchment.
  • Cut a slit, horizontally in each chicken breast to form a pocket. Stuff 1 tbsp herbed goat cheese into each pocket.
  • Place on prepared pan. Coat with cooking spray and sprinkle each with half the salt. Roast for 15 to 17 minutes or until chicken is cooked through. Meanwhile, add asparagus and tomatoes to another baking sheet. Coat lightly with cooking spray. Season with remaining salt and roast for 4 to 5 minutes or until tender crisp.
  • Meanwhile, cook rice according to microwave directions.
  • Serve chicken with rice, asparagus and tomato mix.

Tips

Liven up your stuffed chicken by stirring 1 tbsp (15 mL) fresh chopped parsley, cilantro or chives into the goat cheese.
