Orange-Thyme Chicken Thighs with Whole Grain and Brown Rice

Ingredients

  • 2 pkgs (each 240 g) UNCLE BEN’S® Rice & Grains RTH Whole Grain Brown Rice & Quinoa with Garlic
    1 Large seedless orange, halved
    8 Fresh thyme sprigs
    4 Boneless skinless chicken thighs
    2 tbsp (30 mL) Olive oil
    1 tbsp (15 mL) Honey
    1/4 tsp (1 mL) Each salt and pepper

Directions

  •  Prepare rice according to package directions.
  • Meanwhile, squeeze juice from half of the orange. Slice remaining half into 3 or 4 slices. Remove leaves from half of the thyme sprigs.
  • Preheat oven to 425˚F (220˚C). Toss together chicken thighs, orange juice, thyme leaves, olive oil, honey, salt and pepper. Transfer to 13- x 9-inch (3.5 L) baking dish. Top with remaining thyme sprigs and orange slices.
  • Bake for 30 to 35 minutes or until chicken is cooked through and juices run clear. Serve chicken with rice and pan juices.
