Orange Chicken

Ingredients

  • 2 POUCHES UNCLE BEN’S® BOIL-IN-BAG RICE
    1/4 cup (60 mL) orange juice
    1/4 cup (60 mL) Asian sesame dressing
    1/4 cup (60 mL) chicken broth
    1 tbsp (15 mL) orange zest
    1 tbsp (15 mL) cornstarch
    1 tbsp (15 mL) canola oil
    1 1/2 lb (750g) boneless and skinless chicken thighs, cubed
    1/4 tsp (1 mL) each salt and pepper
    2 cups (500 mL) snow peas

Directions

  • Cook rice according to package directions. Whisk orange juice with dressing, chicken broth, orange zest and cornstarch until combined; set aside.
  • Heat oil in a large, nonstick skillet set over medium-high heat.  Cook chicken with salt and pepper, stirring frequently for 5 to 7 minutes or until golden brown all over.
  • Stir in sauce mixture; bring to a boil. Cook for 1 to 2 minutes or until thickened. Stir in snow peas. Cook for 1 minute or until tender crisp.
  • Serve chicken with rice.
