Moroccan Rice Bowl with Spiced Beef Skewers

Ingredients

  • 12 oz (340 g) Extra-lean ground beef
    1/4 cup (60 mL) Bread crumbs
    1 Egg
    3 tbsp (45 mL) Lemon juice
    2 tbsp (30 mL) Grated onion
    3 cloves Garlic, minced
    1/2 tsp (2 mL) Each ground coriander, cumin and paprika
    1/4 tsp (1 mL) Each ground cinnamon and pepper
    Pinch Salt
    1 pkg (165 g) UNCLE BEN’S® FAST & FANCY® Vegetable Style Rice
    3 tbsp (45 mL) Olive oil
    4 cups (1 L) Chopped eggplant
    4 cups (1 L) Chopped red pepper
    1 tbsp (15 mL) Tahini paste
    2 tbsp (30 mL) Chopped fresh parsley

Directions

  • Preheat oven to 400˚F (200˚C). Line baking sheet with parchment paper. Mix together ground beef, bread crumbs, egg, 2 tbsp (30 mL) of the lemon juice, onion, two-thirds of the garlic, coriander, cumin, paprika, cinnamon, pepper and salt until blended.
  • Shape mixture into 8 small sausage shapes; thread lengthwise onto skewers. Arrange on prepared pan; bake for 10 to 12 minutes or until cooked through.
  • Meanwhile, cook rice according to package directions.
  • In large skillet, heat oil over medium-high heat; sauté eggplant, red pepper and remaining garlic for 10 to 13 minutes or until tender.
  • Divide rice among 4 shallow bowls. Top with sautéed vegetables and skewers. Stir tahini paste with remaining lemon juice and 2 tbsp (30 mL) water. Drizzle over top and garnish with parsley.

Tips

Substitute zucchini with eggplant for a twist!
