Maple Chili Chicken

Maple Chili Chicken

Ingredients

  • 2 pouches (480 g) UNCLE BEN’S® BISTRO EXPRESS® Basmati Coconut Lemongrass & Chili Flavour Rice
    2 tsp (10 mL) Vegetable oil
    1 lb (500 g) Chicken breasts, cut into 1”/ 2.5cm pieces
    2 ½ cups (625 mL) Vegetables (1 ½ cup/ 375 mL diced carrots, ½ cup/ 125 mL frozen peas and ½ cup/125 mL diced onions)
    2 tbsp each (30 mL each) Maple syrup, soy sauce (reduced salt) and water
    Sriracha (optional)

Directions

  • Heat oil in a large non-stick skillet (at least 12”/30 cm) over medium-high heat. Add chicken and stir fry for 5 minutes.
  • Add vegetables, stir until well combined and continue stir frying for 3 minutes.
  • Add maple syrup, soy sauce, water and Sriracha and stir until well combined. Simmer for 2 minutes until chicken is cooked.
  • Heat UNCLE BEN’S® BISTRO EXPRESS® Basmati Coconut Lemongrass & Chili Flavour Rice according to package directions. For each serving:  ½ pouch heated UNCLE BEN’S® BISTRO EXPRESS® Basmati Coconut Lemongrass & Chili Flavour Rice with 1 cup/250 mL Maple Chicken.  Enjoy!

Tips

  • Garnish with sliced green onions.
  • Remember: the smaller the pieces (chicken and vegetables) the faster they cook.
  • Change up the vegetables – all carrots, more peas, change to diced squash, add green beans, but keep at least some of the onions.
  • Need more heat?  Use Sriracha or red pepper flakes to dial it up even more.
  • You can use all frozen vegetables instead.
