Kickin’ Chicken & Sweet Potato Curry with Basmati Rice

Ingredients

  • 1 cup (250 mL) UNCLE BEN’S® Basmati Rice
    1 tbsp (15 mL) Vegetable oil
    1 lb (500 g) Boneless skinless chicken breasts, cubed
    1/4 tsp (1 mL) each Salt and pepper
    1/3 cup (75 mL) Finely chopped onion
    1 tbsp (15 mL) Mild Indian curry paste
    1 clove Garlic, minced
    2 tbsp (30 mL) Tomato paste
    1/2 cup (125 mL) Coconut milk
    1 cup (250 mL) No salt added chicken broth
    1/2 lb (250 g) Sweet potatoes, peeled and chopped (about 1 medium sweet potato)
    1/2 lb (250 g) Green beans, trimmed
    1 cup (250 mL) Peas
    2 Green onions, finely chopped

Directions

  • Prepare rice according to package directions without butter.
  • In large skillet, heat oil over medium heat; cook chicken, salt and pepper for 3 to 5 minutes or until browned. Add onion, curry paste and garlic; cook, stirring, for 2 minutes or until onions soften. Stir in tomato paste; cook for 1 minute.
  • Stir in coconut milk, broth and sweet potatoes; bring to boil. Reduce heat to medium low; cover and cook for 12 to 15 minutes or until sweet potato is tender.
  • Add green beans and peas; cover and cook for 5 minutes or until green beans are tender.
  • Serve over rice; garnish with green onions.

Tips

Ready for something exciting? Add some garam masala, an Indian spice blend, to take the flavour one step further!
