Grilled Vegetable Smokey Flavour Rice and Red Bean Salad with Honey Lime Vinaigrette

Ingredients

  • 2 cups (500mL) Fresh vegetables, diced (about ½”/1.25cm) – zucchini, mushrooms, onions, peppers
    1 tsp (5mL) Canola oil
    1 pouch (240g) UNCLE BEN’S® RICE & PULSES Smokey Flavour Rice and Red Beans
    ¼ cup (60mL) Diced celery
    3 tbsp (45mL) Honey Lime Vinaigrette – whisk together the following:
    4 tsp/20 mL olive oil
    1 tbsp/15 mL lime juice
    2  tsp/10 mL honey
    ¼ tsp/1 mL chili powder
    ¼ tsp/1 mL minced garlic
    ⅛ tsp/0.5 mL each salt and pepper
    2 tbsp (30mL) Fresh chopped parsley

Directions

  • Preheat BBQ to medium.  In a bowl, toss vegetables with oil (season if desired).  Place in a grill wok or grill sheet. BBQ vegetables for 10-15 minutes, stirring frequently, until tender.  Allow to cool slightly.
  • In a bowl, add UNCLE BEN’S® RICE & PULSES Smokey Flavour Rice and Red Beans. Use a spoon to break up the large pieces.  Add cooled, grilled vegetables, celery, Honey Lime Vinaigrette and parsley.  Toss until well combined.

Tips

  • Grill large pieces of vegetables first and then cut to appropriate size.
  • Garnish with chopped fresh tomatoes.
  • Garnish with green onions.
  • Change parsley to cilantro or fresh chives.
  • Adjust heat level to your preference.
  • Change celery with corn, tomatoes, cucumbers, carrots or peppers.
