Ginger-Glazed Chicken With Wholegrain Rice & Quinoa

  • 1 pkg (240 g) UNCLE BEN’S® Rice & Grains RTH Wholegrain and Quinoa
    to taste Salt and Pepper
    6 boneless, skinless chicken breasts (4-6 ounces each)
    ¼ cup (60 mL) honey
    ¼ cup (60 mL) Dijon mustard
    ½ cup (125 mL) Brown sugar
    ¼ tsp (1 mL) Powdered ginger
    ½ cup (125 mL) Low sodium chicken broth or vegetable broth


  • Prepare rice according to package instructions
  • Season chicken with salt and pepper. Grill, bake or pan sear until cooked through
  • In a small saucepan, add chicken stock, brown sugar, honey, Dijon mustard and ginger. Over medium heat, stir mixture often until glaze forms, about 4 minutes
  • Remove from heat and let stand until chicken is done. Apply glaze to chicken and serve with rice.
