Chinese Ground Chicken and Rice Bowl with Fried Egg

Ingredients

  • 1 cup (250 mL) UNCLE BEN’S® CONVERTED® BRAND RICE
    3 tbsp (45 mL) soy sauce
    2 tbsp (30 mL) rice wine vinegar
    1 tsp (5 mL) sugar
    1 tbsp (15 mL) oil
    1 lb (500 g) extra lean ground chicken
    2 tsp (10 mL) each minced garlic, ginger and Chinese five spice powder
    1 cup (250 mL) frozen peas
    1/2 red pepper, thinly sliced
    4 eggs, fried

Directions

  • Cook rice according to package directions without butter or salt. Whisk soy sauce with rice wine vinegar and sugar; set aside
  • Heat half the oil in a large, nonstick skillet set over medium heat. Add ground chicken, garlic, ginger and five spice. Cook, stirring, for 8 minutes or until golden brown.
  • Stir in reserved sauce, peas and peppers. Bring to simmer, cook for 2 to 3 minutes or until thickened.
  • Serve over rice. Top with fried egg.

Tips

Substitute ground pork or beef for the chicken
