Chinese Chicken and Rice Salad

Ingredients

  • 1 cup (250 mL) UNCLE BEN’S® WHOLEGRAIN BROWN RICE (10 MINUTE)
    3 cups (750 mL) shredded, cooked chicken
    4 cups (1 L) prepared coleslaw mix with carrot, green and red cabbage
    1/2 red pepper, thinly sliced
    1/4 cup (60 mL) finely sliced green onion
    1/4 cup (60 mL) crispy chow mein noodles
    1/2 cup (125 mL) Prepared Asian sesame dressing
    1/4 cup (60 mL) chopped roasted peanuts
    2 tbsp (30 mL) chopped fresh cilantro
    lime wedges, optional

Directions

  • Cook rice according to package directions without butter or salt. Cool to room temperature.
  • Stir rice with chicken, coleslaw mix, red pepper and green onion until combined. Toss with dressing.
  • Garnish with peanuts and chow mein noodles and cilantro. Serve with lime wedges if desired.

Tips
