Chili Pas d’cochon

Ingredients

  • 2 packages (480 g) UNCLE BEN’S® Spicy Wholegrain & Quinoa with Chili (240g)
    2 cups (500 mL) Pulled pork (or substitute another easy to pull apart, cooked meat)*
    2 cups (500 mL) Black Beans, rinsed and drained, plus 1 tbsp (15 mL) oil for cooking
    2 tbsp (30 mL) Cajun spices and smoked paprika
    1 Tomato, diced
    2 Limes, juiced

Directions

  • Add oil in frying pan and warm up beans with cajun spices or smoked paprika for 2 minutes.
  • Add pulled-pork, lime juice, diced tomato and ¾ cups of water.
  • Warm up gently for 10 minutes.
  • On a plate, put the Chili “Pas d’cochon” on top of cooked UNCLE BEN’S® Spicy Wholegrain & Quinoa with Chili.
  • Top with minced cilantro if desired.
