Ingredients

  • 2 pkgs (each 240 g) UNCLE BEN’S® Rice & Grains RTH Wholegrain and Wild
    1 lb (500 g) Cooked sliced chicken breast
    1 Ripe avocado, peeled, pitted and sliced
    1 cup (250 mL) Halved cherry tomatoes
    2 Green onions, sliced
    1/4 cup (60 mL) Olive oil
    2 tbsp (30 mL) Red wine vinegar
    1 tsp (5 mL) Dijon mustard
    1/4 tsp (1 mL) Each salt and pepper

Directions

  • Prepare rice according to package directions.
  • Grill or bake chicken breast and slice.
  • Divide rice among 4 shallow bowls; arrange chicken, avocado and tomatoes on top. Sprinkle with green onions.
  • Whisk together oil, vinegar, mustard, salt and pepper until blended. Drizzle over rice bowl.
