Butter Chicken with Basmati Coconut Rice

Ingredients

  • 2 pouches (480 g) UNCLE BEN’S® BISTRO EXPRESS® Basmati Coconut Rice
    2 tsp (10 mL)  Vegetable oil
    1 lb (500 g) Chicken breasts, cut into 1” / 2.5cm pieces
    1 jar Butter Chicken Sauce
    1 cup (250 mL) Fresh cilantro leaves
    2 cups (500 mL) Cucumbers, thinly sliced

Directions

  • Heat oil in a large non-stick skillet over medium heat. Add chicken and stir fry for 5 minutes.
  • Add entire contents of jar, stir until well combined and reduce heat. Simmer for 10 minutes until chicken is cooked.
  • Heat UNCLE BEN’S® BISTRO EXPRESS® Basmati Coconut Rice according to package directions.
  • For each serving: ½ pouch of heated UNCLE BEN’S® BISTRO EXPRESS® Basmati Coconut Rice, 2/3 cup/165 mL Butter Chicken mixture, ¼ cup/60 mL cilantro and ½ cup/125 mL cucumber. Enjoy!

Tips

  • Prepare this dish (and cut some more fat) by using leftover rotisserie chicken (about 2 cups/500 mL).  Bring sauce to a simmer and add cooked chicken and continue simmering for 10 minutes.  Continue as directed above.
  • Add 1 cup of frozen peas with the Butter Chicken Sauce.
  • To get all of the delicious sauce out of the jar: either use a spatula or once you have emptied jar, add 2 tbsp/30 mL of water, put lid back on and shake vigourously and add to pan.
  • Replace plain cucumbers with a Cucumber Raita – yogurt cucumber salad.
  • Add a dollop of plain yogurt or sour cream.
  • Add sliced green onions
