Butter Chicken Meatballs with Basmati Rice and Broccoli and Cauliflower Popcorn

Ingredients

  • 1 cup (250 mL) UNCLE BEN’S® Basmati Rice
    1 lb (500 mL) Extra-lean ground chicken
    1/4 cup (60 mL) Bread crumbs
    1 Egg
    2 Green onions, finely chopped
    3 tsp (15 mL) Garam masala
    1/4 tsp (1 mL) Salt
    1 tbsp (15 mL) Butter
    1 Onion, finely chopped
    2 cloves Garlic, minced
    1 tbsp (15 mL) Minced fresh gingerroot
    1 tsp (5 mL) Ground cumin
    1 tsp (5 mL) Ground coriander
    1 can (398 mL) No salt added diced tomatoes
    1/4 cup (60 mL) 35% Whipping cream
    4 cups (1 L) Broccoli florets
    4 cups (1 L) Cauliflower florets
    1 tbsp (15 mL) Canola oil
    1 tsp (5 mL) Curry powder

Directions

  • Preheat oven to 425˚F (220˚C). Line baking sheet with parchment paper.
  • Mix together ground chicken, bread crumbs, egg, green onions, 2 tsp of the garam masala and salt until combined; roll into 1-inch (2.5 cm) balls and place on prepared baking sheet. Bake for 10 to 12 minutes or just until cooked through.
  • Meanwhile, in large skillet, melt butter over medium heat; cook onion, garlic, ginger, cumin, coriander and remaining garam masala, stirring, for 5 minutes or until vegetables soften. Pour in tomatoes and cream; bring to boil. Reduce to simmer; cook for 15 minutes or until sauce thickens slightly. Add meatballs; cook for 15 minutes.
  • Meanwhile, prepare rice according to package directions without butter. Meanwhile, toss together broccoli, cauliflower, oil and curry powder; arrange in single layer on baking sheet. Roast for 20 minutes or until tender and golden brown in a few spots.
  • Spoon chicken meatballs and sauce over rice; serve with broccoli and cauliflower popcorn on the side.

Tips

Add your own flare with toasted whole spices like cinnamon stick, cardamom pods, whole cloves or cumin seeds. It’s seriously delicious!
