1 cup (250 mL) chopped kielbasa or sausage of choice
4 tsp (20 mL) cajun seasoning
1 cup (250 mL) tomato sauce
1/4 cup (60 mL) water
Heat oil in large skillet set over high heat. Sauté onion, celery and green pepper for 2 minutes or until starts to soften. Add chicken, kielbasa and Cajun seasoning and sauté for 2 minutes or until fragrant.
Add rice, tomato sauce and water. Cook, stirring occasionally, for 4 to 5 minutes or until rice is heated through.
Try replacing kielbasa with cured chorizo for that famous Spanish heat.
