Bayou’s Best Chicken Jambalaya With Long Grain Rice

Ingredients

  • 2 pkgs (each 250 g) UNCLE BEN’S® BISTRO EXPRESS® Long Grain & Wild-Roasted Garlic Flavour
  • 2 tbsp (30 mL) canola oil
  • 1/2 onion, chopped
  • 1 celery, chopped
  • 1 green pepper, seeded and chopped
  • 1 pkg (150 g) fully cooked chicken strips
  • 1 cup (250 mL) chopped kielbasa or sausage of choice
  • 4 tsp (20 mL) cajun seasoning
  • 1 cup (250 mL) tomato sauce
  • 1/4 cup (60 mL) water

Directions

  • Heat oil in large skillet set over high heat. Sauté onion, celery and green pepper for 2 minutes or until starts to soften.  Add chicken, kielbasa and Cajun seasoning and sauté for 2 minutes or until fragrant.
  • Add rice, tomato sauce and water. Cook, stirring occasionally, for 4 to 5 minutes or until rice is heated through.

Tips

Try replacing kielbasa with cured chorizo for that famous Spanish heat.
