Basmati Medley with Vegetables & Shrimps

Ingredients

  • 1 package (170g) UNCLE BEN’S® Basmati Medley
    4 tbsp (60 mL) Low sodium teriyaki sauce
    1 cup (250 mL) Mixed vegetables (ex. cauliflower, bell peppers, zucchini)
    12 oz (350 mL) Cooked shrimp with tails removed, plus 1 tbsp (15 mL) of oil for cooking

Directions

  • Prepare rice according to package instructions.
  • Steam mixed vegetables – pick a pot or pan that’s big enough to hold all your vegetables, preferably in a single layer. Then add half an inch of water at the bottom. Once the water is boiling, add the vegetables.  Keep an eye on the water level – and if it gets too low, you’ll need to add a bit more, so that it keeps generating steam.  Steam until vegetables are soft.
  • Heat oil in large skillet over medium-high heat.  Add in shrimp, and toss to coat with teriyaki sauce.  Cook and stir until sauce is bubbly then stir in steamed vegetables and mix until well coated.  Add salt and pepper to taste.
  • Serve over UNCLE BEN’S® Basmati Medley and enjoy.
