Asian Chicken Meatballs

Asian Chicken Meatballs

Ingredients

  • 1 lb (500 g) extra lean ground chicken
    1/2 cup (125 mL) breadcrumbs
    1/4 cup (60 mL) finely chopped green onions
    1 egg
    4 tsp (20 mL) soy sauce
    2 cloves garlic, minced
    1/2 cup (125 mL) hoisin sauce
    1/4 cup (60 mL) peanut butter
    2 tbsp (30 mL) honey
    2 tbsp (30 mL) toasted sesame seeds
    1 cup (250 mL) UNCLE BEN’S QUICK COOK PERFECTION LONG GRAIN RICE (8 MINUTES)

Directions

  • Preheat oven to 400°F (200°C). Line baking sheet with parchment paper. Spray with cooking spray; set aside.
  • Mix ground chicken with breadcrumbs, 1/4 cup green onions, egg, soy sauce and garlic until combined. Roll into 24 meatballs and place on prepared baking sheet. Bake for 18 to 20 minutes or until golden brown and cooked through.
  • Stir hoisin sauce with peanut butter and honey in microwave safe bowl. Heat in microwave until simmering. Toss with meatballs. Garnish with sesame seeds.
  • Meanwhile, cook rice without butter and salt according to package directions. Serve meatballs over rice.

Tips

Use Uncle Ben’s Bistro Express Original Converted Brand Rice or Uncle Ben’s Bistro Express Whole Grain Brown Rice.
